  • 20 ml rhum agricole, 100 proof
  • 20 ml lime juice, freshly squeezed
  • 15 ml simple syrup
  • 150 g ice
  • 1 grapefruit twist

Method

Combine 200g sugar and 240ml water in a saucepan over low heat (approx 85°C/185°F).

Stir the mixture constantly until the sugar has completely dissolved.

Look for: Liquid is perfectly clear with no visible sugar crystals.

Remove from heat and allow the syrup to cool to room temperature before use.

Add the pineapple rum, rhum agricole, lime juice, and 15ml of the prepared simple syrup into a cocktail shaker filled three-quarters with ice.

Shake the mixture vigorously for 30 seconds until the outside of the shaker is very cold.

Strain the liquid into a chilled coupe glass.

Squeeze the grapefruit twist over the surface of the drink to release aromatic oils, then discard the peel.

Chef's Notes
