Method

Place 30g sugar and 30ml hot water into the cocktail shaker. Shake until the sugar is fully dissolved.

Add 30ml tamarind concentrate and 45ml lemon juice to the shaker. Shake vigorously to combine.

Fill four highball glasses with ice. Divide the tamarind mixture evenly among the glasses.

Top each glass with 60ml of soda water. Add two dashes of Angostura bitters to each drink.

Hold an orange zest strip over a flame for 10 seconds until it begins to color. Twist the strip over the drink to release oils, then place it in the glass.
