Method

Place the strawberries in the bottom of the cocktail shaker and crush them thoroughly with a muddler.

Add the jalapeño slices, honey water, tequila, lime juice, and cilantro sprig to the shaker.

Fill the shaker with ice cubes and secure the lid.

Shake the mixture vigorously for 15 seconds until the shaker is very cold to the touch, approximately 0°C (32°F).

Strain the cocktail into a short tumbler filled with fresh ice.
Chef's Notes
- For optimal flavor, use ripe, in-season strawberries. If they are a bit tart, you can slightly increase the honey water.
- Adjust the amount of jalapeño to your preference for heat. For a milder spice, remove the seeds and membranes before muddling.
- Don't over-muddle the cilantro, as it can release bitter notes. A gentle press is sufficient to release its oils.
- Ensure your shaker is well-chilled before adding ice. This helps achieve the optimal temperature for dilution and chilling.
- Double-straining (using both the shaker's built-in strainer and a fine-mesh sieve) can ensure a smoother texture by catching small bits of fruit or herb.
