Method

01

Place the lime wedges, mint leaves, and granulated sugar into the highball glass.

02

Press the ingredients with the end of a rolling pin to extract the lime juice and bruise the mint leaves to release their aromatic oils.

Look for: Lime juice is released and sugar begins to dissolveFeel: Mint leaves are softened but not shredded
03

Fill the glass with ice and pour the white rum over the top.

04

Add club soda to fill the glass and stir gently with a bar spoon to combine the layers.

05

Garnish the glass with a fresh mint sprig and serve immediately.

Chef's Notes

  • Use fresh, vibrant mint leaves for the best aroma and flavor. Gently muddle them to release oils, avoiding over-bruising which can turn them bitter.
  • Adjust the sugar to your preference. Simple syrup can also be used for easier dissolving, but granulated sugar provides a slight textural contrast.
  • Ensure your club soda is well-chilled and freshly opened for maximum effervescence. Top it off just before serving to maintain fizziness.
  • Taste and adjust the lime juice and rum if needed. The balance is key to a great Mojito.
