- 450 g potatoes, cooked and mashed
- 4 scallions, sliced, including green part
- 3 g fine sea salt
- 1 g freshly ground black pepper, freshly ground
- 60 ml milk, hot
- 41 g butter, melted

Method
Preheat your broiler to high heat. Position the oven rack 15 cm (6 inches) from the broiler element.
In a mixing bowl, combine the cooked and mashed potatoes, sliced scallions, salt, pepper, and hot milk. Mix with a fork until just combined, being careful not to overmix.
Transfer the mashed potato mixture to a heat-proof serving dish. Smooth the surface with the back of a fork.
Drizzle the melted butter evenly over the surface of the mashed potatoes. Broil for 3-5 minutes, or until the top is golden brown and bubbly. Watch closely to prevent burning.
Serve immediately.
Chef's Notes
- For extra richness, use heavy cream instead of milk.
- If you prefer a less browned top, you can toast the potatoes under the broiler for a shorter amount of time and then serve immediately.
Storage
Refrigerator: 3 days — Store in an airtight container.
Reheating: Reheat in the microwave, or bake in a low oven until heated through and golden on top
