Ingredients
Hot Water Dough
- 300 g all-purpose flour, sifted
- 160 ml boiling water
- 40 ml cold water, room temperature or cool
- 2 g salt, fine
Rolling Assembly
- 30 ml vegetable oil
- 5 ml toasted sesame oil

Method
Place the flour and salt in a heat-proof mixing bowl. Pour the boiling water (100°C/212°F) slowly over the flour while stirring vigorously with chopsticks or a fork. The mixture will look shaggy and dry initially.
Add the cold water to the bowl. Once the dough is cool enough to handle, use your hands to knead it inside the bowl or on a work surface for about 5-8 minutes until smooth, soft, and elastic.
Shape the dough into a ball, cover with a damp cloth or plastic wrap, and let it rest at room temperature. This allows the gluten network to relax, making it easier to roll out thinly.
Combine vegetable oil and sesame oil in a small dish. Divide the rested dough into two equal halves. Roll each half into a log, then cut each log into 8 equal pieces (16 pieces total). Roll each piece into a small ball.
Take two dough balls. Flatten them into discs with your palm. Brush the top of one disc generously with the oil mixture. Place the second disc on top of the oiled side (creating a sandwich). Repeat with remaining dough balls to create 8 pairs.
On a lightly floured surface, gently roll out each paired dough 'sandwich' from the center outwards, flipping occasionally to ensure even size. Roll until they are translucent and approximately 15-18cm (6-7 inches) in diameter.
Heat a dry skillet over medium-low heat. Place a rolled pancake into the pan. Cook until air pockets bubble up and the dough turns opaque with minor golden spots, about 45-60 seconds.
Flip the pancake and cook the other side for another 30-45 seconds. Do not overcook or they will become brittle crackers. Transfer to a plate.
While still warm, locate the seam between the two layers and gently peel them apart into two separate, thin pancakes. Stack them on a plate covered with a clean kitchen towel to keep them soft and warm while cooking the rest.
Chef's Notes
- The 'Hot Water Dough' (Tang Mian) method is critical here. Boiling water gelatinizes the starch and limits gluten development, resulting in a wrapper that is tender rather than rubbery.
- Do not skip the resting period. If the dough springs back when you try to roll it, it needs to rest longer.
- Keep cooked pancakes covered with a warm, damp towel at all times. Air is the enemy of these wrappers and will turn them into crispy crackers within minutes.
- For a truly authentic texture, the brown spots should be minimal—just enough to indicate the dough is cooked through. We are looking for 'soft and steamy' rather than 'crispy and toasted'.
Storage
Refrigerator: 3 days — Store in an airtight container or ziplock bag to prevent drying out.
Freezer: 1 month — Separate with parchment paper before freezing.
Reheating: Steam for 2-3 minutes or microwave covered with a damp paper towel for 30 seconds.
