Lemon Herb Chicken
- 400 g chicken breast, boneless, skinless, diced into 2.5cm cubes
- 15 ml olive oil
- 1 lemon, zested and juiced
- 3 g garlic powder
- 2 g dried oregano
- 3 g salt
- 1 g black pepper
Spiced Chickpeas and Broccoli
- 240 g canned chickpeas, drained, rinsed, and patted dry
- 250 g broccoli, cut into medium florets
- 15 ml olive oil
- 2 g smoked paprika
- 2 g salt

Method
Preheat the air fryer to 200°C (390°F) for 5 minutes.
In a mixing bowl, toss the diced chicken breast with 15ml olive oil, lemon zest, half of the lemon juice, garlic powder, oregano, 3g salt, and black pepper. Wash your hands thoroughly and sanitize all surfaces after handling raw chicken to prevent cross-contamination.
In a separate clean mixing bowl, toss the dried chickpeas and broccoli florets with the remaining 15ml olive oil, smoked paprika, and 2g salt until evenly coated.
Arrange the marinated chicken and chickpeas in a single, even layer in the preheated air fryer basket. Roast at 200°C (390°F) for 8 minutes.
Carefully open the air fryer basket and add the seasoned broccoli. Give the basket a vigorous shake to redistribute the ingredients. Continue roasting at 200°C (390°F) for an additional 7 minutes, or until the chicken reaches a safe internal temperature of 74°C (165°F) and the broccoli has tender stalks with crispy, charred edges.
Transfer the roasted chicken, chickpeas, and broccoli into two serving bowls. Drizzle the remaining fresh lemon juice over the top immediately before serving.
Chef's Notes
- Dicing your chicken breast into uniform pieces is critical. Variations in size will lead to smaller pieces drying out before the larger pieces reach a safe internal temperature.
- Do not skip patting the chickpeas completely dry. Any residual water will create steam in the air fryer, preventing them from developing that desirable crispy exterior.
- To elevate this bowl further without adding extra cooking time, finish with a sprinkle of fresh parsley, dill, or a dairy-free tzatziki sauce.
- Air fryer models vary greatly in heat circulation and intensity. Check your chicken at the 12-minute total mark to ensure you do not overcook the lean meat.
Storage
Refrigerator: 3 days — Store in an airtight container. Reheat gently in the air fryer or microwave.
Reheating: Air fry at 180C for 3-4 minutes to restore crispness, or microwave for 90 seconds.
