- 1000 g baby potatoes, halved
- 45 ml extra virgin olive oil
- 4 garlic, minced
- 10 g fresh sage, roughly chopped, divided

Method
Preheat the oven to 220C/425F. Place a heavy baking sheet in the oven while it preheats to help crisp the potatoes immediately upon contact.
In a large mixing bowl, toss the halved baby potatoes with the extra virgin olive oil, kosher salt, minced garlic, and half of the chopped fresh sage until evenly coated.
Carefully remove the hot baking sheet from the oven. Spread the seasoned potatoes onto the pan in a single layer, ensuring the cut sides are facing down. Roast in the oven for 25 minutes without disturbing them.
Remove the pan from the oven. Use a spatula to gently flip the potatoes, then return them to the oven to roast for an additional 20 minutes until the edges are completely crisp and the centers are soft.
Remove the potatoes from the oven and immediately transfer them back to the mixing bowl. Toss with the remaining fresh sage so the residual heat releases the herb's essential oils. Let rest for 5 minutes before serving.

- Using a waxy or semi-waxy potato like baby Yukon Gold yields a delightfully creamy interior that contrasts perfectly with the crispy roasted skin.
- Do not line the baking sheet with parchment paper if you want maximum crispness. Direct contact with the hot metal conducts heat much more efficiently.
Storage
Refrigerator: 4 days — Store in an airtight container.
Freezer: 1 month — Texture may become slightly mealy upon thawing, best refreshed in the oven.
Reheating: Reheat in a 200C/400F oven for 10 minutes to restore crispness. Microwaving is not recommended as it will make the potatoes soggy.
