Crostini Base
- 150 g baguette, sliced 1cm thick
- 30 ml extra virgin olive oil
Toppings
- 150 g stracciatella cheese, room temperature
- 30 g mixed baby greens, washed and dried
- 15 ml extra virgin olive oil
- 5 ml lemon juice, freshly squeezed
- 2 g flaky sea salt
- 10 g fresh white truffle, gently brushed clean

Method
Preheat the oven to 200°C/400°F.
Slice the baguette into rounds approximately one centimeter thick using a bread knife.
Brush both sides of the baguette slices evenly with extra virgin olive oil and arrange them in a single layer on a baking sheet.
Bake the bread slices in the preheated oven for 8 to 10 minutes until the edges are crisp and golden brown. Remove and let them cool for two minutes so they remain warm but are easy to handle.
In a mixing bowl, lightly toss the mixed baby greens with the remaining extra virgin olive oil, fresh lemon juice, and flaky sea salt until just coated.
Spread a generous spoonful of room temperature stracciatella cheese onto each warm crostini, then top with a small, airy mound of the dressed greens.
Using a truffle slicer, shave the fresh white truffle as thinly as possible directly over the assembled crostini. Serve immediately while the base is still slightly warm.
Chef's Notes
- White truffles are incredibly sensitive to heat and will lose their signature aroma if cooked. Always treat them as a finishing garnish rather than an ingredient to be incorporated into hot elements.
- Using a specialized, adjustable truffle slicer allows you to achieve paper-thin shavings. This maximizes the exposed surface area, which releases far more aroma than thicker cuts.
- Stracciatella cheese provides a rich, mild, creamy base that contrasts beautifully with the crisp crostini and allows the delicate truffle flavor to remain the star without competing aromatics.
- Ensure the crostini are slightly warm when assembling. The gentle, ambient heat from the bread helps volatilize the truffle compounds and pushes the scent upward as it is served.
