Place the crumbled blue cheese, minced garlic, chopped chives, mayonnaise, sour cream, milk, and water into a mixing bowl.

Stir all ingredients together until they are evenly distributed.

Process the mixture in a blender if a smoother consistency is desired, or leave as is for a chunky texture.
Look for: Dressing is uniform in color with desired level of smoothness.
Chef's Notes
- For the best flavor, use a good quality blue cheese with a strong, pungent aroma. Roquefort or Gorgonzola are excellent choices.
- Don't over-process the dressing if you prefer a chunky texture. A few pulses in the blender are usually sufficient to incorporate ingredients without completely liquefying the cheese crumbles.
- Adjust the milk or water to achieve your desired dressing consistency. Start with the listed amount and add more, a tablespoon at a time, until it reaches your preference.
- For an extra layer of flavor, consider adding a pinch of black pepper or a dash of Worcestershire sauce. These additions complement the blue cheese beautifully.
