Asian-Inspired Dressing
- 30 ml soy sauce
- 15 ml rice vinegar
- 10 ml sesame oil, toasted
- 15 ml honey
- 10 g fresh ginger, peeled and finely grated
- 1 garlic, minced
Salad Filling
- 250 g leftover cooked turkey, shredded or finely diced
- 50 g carrots, julienned or grated
- 50 g water chestnuts, drained and diced
- 20 g scallions, thinly sliced
Cups and Garnish
- 1 iceberg lettuce, medium head
- 30 g unsalted roasted peanuts, crushed

Method
In a medium mixing bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic until the honey is completely dissolved.
Add the shredded leftover turkey to the dressing. Toss thoroughly to coat the meat evenly, then let it rest at room temperature to absorb the flavors.
Gently fold the julienned carrots, diced water chestnuts, and sliced scallions into the marinated turkey mixture.
Carefully separate the iceberg lettuce leaves to form natural cups, trimming the edges with clean kitchen scissors if a neat, uniform shape is desired.
Spoon the turkey and vegetable mixture generously into the center of each lettuce cup. Top with crushed roasted peanuts immediately before serving.
Chef's Notes
- For the absolute crispest lettuce cups, soak the fully separated iceberg leaves in an ice water bath for 10 minutes, then pat them completely dry with paper towels before assembling.
- Leftover dark meat turkey works exceptionally well in this application as it absorbs the soy-ginger marinade better and remains far more tender than white breast meat.
- If you prefer a warm appetizer, you can briefly saute the turkey and vegetable mixture over medium-high heat for 2 to 3 minutes until warmed through before spooning it into the cold lettuce cups.
- To make this recipe strictly gluten-free, substitute the conventional soy sauce with an equal amount of high-quality tamari.
Storage
Refrigerator: 3 days — Store filling and lettuce leaves in separate airtight containers.
Reheating: Serve cold or gently warm the turkey filling in a skillet before serving.
