Kirsch Cherries
- 200 g fresh sweet cherries, pitted and halved
- 15 ml kirschwasser (cherry liqueur)
- 15 g caster sugar
Whipped Ricotta
- 250 g whole milk ricotta, drained of excess liquid
- 50 ml heavy whipping cream, chilled
- 35 g icing sugar, sifted
- 5 ml vanilla extract
Garnish
- 30 g 70% dark chocolate, block or bar

Method
In a small mixing bowl, combine the pitted and halved fresh cherries, kirsch, and caster sugar. Stir gently to coat the fruit evenly.
Set the cherry mixture aside to macerate at room temperature for 15 minutes, allowing the sugars to extract the fruit juices and blend with the liqueur.
In a separate medium bowl, combine the drained ricotta, cold heavy cream, sifted icing sugar, and vanilla extract. Beat forcefully with a whisk or hand mixer until the mixture is completely smooth, aerated, and holds soft peaks.
Using a microplane or sharp chef knife, finely shave or chop the dark chocolate into delicate shards.
Spoon or pipe the whipped ricotta evenly into four serving glasses or bowls. Top each portion with the macerated cherries, ensuring the resulting syrupy juices are drizzled over the cheese.
Garnish each serving generously with the dark chocolate shards just before serving.

- To elevate the presentation, you can lightly toast a handful of slivered almonds and scatter them on top for a delightful textural crunch that complements the cherry and amaretto flavor profiles.
- Quality ricotta is paramount here. Look for brands with only milk, salt, and starter culture on the ingredient list rather than those thickened with gums or stabilizers.
- The heavy cream is essential as it provides the necessary fat structure to trap air bubbles, turning otherwise dense ricotta into a cloud-like mousse.
- If preparing for a dinner party, the ricotta can be whipped and piped into glasses hours in advance and chilled. Only add the cherries and chocolate directly before serving to maintain pristine contrasting temperatures and prevent color bleeding.
Storage
Refrigerator: 24 hours — Best consumed within 4 hours. If storing longer, keep cherries and ricotta in separate airtight containers so the ricotta does not weep.
