- 8 fresh figs, halved lengthwise

- 150 g mascarpone cheese, chilled
- 40 ml honey, divided
- 5 ml vanilla extract

Method
Preheat your oven to 200 degrees Celsius or 400 degrees Fahrenheit.
Arrange the halved fresh figs cut-side up on a baking sheet. Drizzle exactly half of the honey evenly over the exposed flesh of the figs.
Roast the honeyed figs in the preheated oven for 8 to 10 minutes, or until the fruit softens slightly and begins to release fragrant juices.
While the figs roast, place the mascarpone cheese, vanilla extract, and the remaining half of the honey into a mixing bowl. Whisk gently just until smooth and combined.
Remove the roasted figs from the oven. Divide the warm figs among four individual serving plates, ensuring each plate gets four halves.
Spoon a generous dollop of the vanilla mascarpone over or alongside each portion of figs.
Scatter the chopped pistachios over the top of the dish. Serve immediately to enjoy the contrast of the warm fruit against the cool cheese.
Chef's Notes
- To elevate the flavor profile, try finishing the dish with a tiny pinch of flaky sea salt right before serving to balance the sweetness.
- When selecting figs, look for smooth, unbruised skin and a slight give when squeezed. A sour smell indicates they are past their prime.
- If you prefer a deeper caramel flavor, replace half the honey used for roasting the figs with a sprinkle of brown sugar.

Refrigerator: 1 day — Store leftover mascarpone and figs in separate airtight containers. Best enjoyed fresh.
