Crust
- 1 unbaked pie crust, chilled
Brown Sugar Filling
- 115 g unsalted butter, melted and slightly cooled
- 320 g light brown sugar, packed tightly
- 3 eggs, room temperature
- 120 ml heavy cream
- 15 g all-purpose flour
- 10 ml vanilla extract
- 3 g kosher salt

Method
Preheat your oven to 175°C (350°F) and position an oven rack in the lower third of the oven.
In a large mixing bowl, whisk the melted unsalted butter and packed light brown sugar together until thoroughly combined and slightly thickened.
Whisk the room temperature eggs into the sugar mixture one at a time, ensuring each egg is fully incorporated before adding the next.
Whisk in the heavy cream, all-purpose flour, vanilla extract, and kosher salt until the custard is completely smooth and free of lumps.
Pour the prepared filling into the chilled pie crust inside your 9-inch pie dish.
Bake the pie at 175°C (350°F) for 45 to 55 minutes. The edges of the filling should be puffed and set, while the center should still have a slight jiggle.
Carefully transfer the pie to a wire cooling rack. Allow it to cool completely at room temperature for at least 2 hours to let the gooey caramel interior set properly.
Chef's Notes
- For the deepest flavor profile, try substituting half of the light brown sugar with dark brown sugar, which brings a heavier, more pronounced molasses note.
- Par-baking your pie crust for 15 minutes before adding the filling will guarantee a crisp bottom crust that provides an excellent textural contrast to the gooey center.
- Ensure your melted butter has cooled slightly before whisking in the eggs to prevent them from scrambling.
- Serve this intensely sweet pie slightly chilled or at room temperature, ideally alongside a generous dollop of unsweetened whipped cream or crème fraîche for balance.
Storage
Refrigerator: 5 days — Store loosely covered with aluminum foil or plastic wrap once completely cooled.
Freezer: 1 month — Wrap tightly in plastic wrap and then foil. Texture may become slightly denser upon thawing.
Reheating: Serve chilled, at room temperature, or warm individual slices in the microwave for 15 seconds.
