heavy cream dip
- 100 ml heavy cream
- 22 ml lemon juice
- 1 garlic, finely grated

cottage cheese dip
- 100 g cottage cheese
- 1 garlic, finely grated
- 1 scallion, finely chopped
- 5 ml pickled jalapeño slices
- 2 sundried tomatoes
- 1 g salt
- ½ g black pepper
crème fraîche dip
- 100 g crème fraîche
- 5 ml olive oil
- ½ garlic, grated
- 3 g lemon zest
- 22 ml lemon juice
- 3 g fresh herbs, finely chopped
- 1 g salt
- ½ g black pepper

Method
For the heavy cream dip, combine the cream, lemon juice, garlic, chives, salt, and pepper in a small bowl.
Allow the heavy cream dip to rest for 30 minutes at room temperature to allow the acid to thicken the cream.
For the cottage cheese dip, place the cottage cheese, garlic, scallion, jalapeños, sundried tomatoes, salt, and pepper into a blender and process until the mixture is smooth.
For the crème fraîche dip, whisk together the crème fraîche, olive oil, garlic, lemon zest, lemon juice, herbs, salt, and pepper in a bowl.
Place the crème fraîche dip in the refrigerator to chill before serving.
Chef's Notes
- For the cream dip, using a high-fat heavy cream will yield the best thickening results. If your cream doesn't thicken, a tiny pinch of xanthan gum can be whisked in, but use sparingly to avoid a gummy texture.
- When blending the cottage cheese dip, don't over-process. A slightly coarser texture can be appealing, and over-blending can make it too watery.
- Taste and adjust seasoning for each dip before chilling or serving. The intensity of flavors can change as dips rest.
- These dips are best served chilled, but allow them to sit at room temperature for about 10-15 minutes before serving for optimal flavor and texture.
- Garnish generously with extra fresh herbs, a drizzle of olive oil, or a sprinkle of chili flakes to enhance visual appeal and add another layer of flavor.
Storage
Refrigerator: 3 days — Store in an airtight container.
Reheating: Serve chilled directly from the refrigerator.
